Found the most beautiful ripe peaches at the market today. They're ripe enough to bake into a dessert. Here is the easiest recipe for Peach Cobbler I have ever come across:

Peach Cobbler

12 medium-sized ripe peaches, cut up into chunks (no need to peel)
1/2 c. raisins
1/2 c. oatmeal
1/2 c. brown sugar
1/2 c. coconut

1/2 tsp cinnamon

mix all ingredients together gently. put into pan. cover with foil. bake at 350 degrees (180 C) for around 40 minutes.

The great thing about this is that 1) you only have to wash one measuring cup and one measuring spoon. 2) you can't get mixed up with the measurements--it's all 1/2 cup for everything. At my age, this is meaningful. 3) no fat. just good stuff (all right, not the sugar).

This doesn't come out like a standard cobbler that has the crumb crust on top. It's kind of a Faux Cobbler. But for five minutes' worth of work, it's good enough for me!
