Baking Day


It's been a busy day. First thing in the morning, I headed off to Beitar for our quilt meeting. It takes me nearly two hours to get there by bus, but I love those meetings so much, I never notice how long it's taking to get there. This morning, I listened to an audiobook on my MP3 player, and the time just flew by. The first hour of the meeting is our Bible study class. We have a wonderful teacher who comes every week to teach us. And she doesn't mind if we are stitching away while she teaches. So I was able to get most of the binding done on this:


Later on in the afternoon, after I got home, I was able to finish the binding. Still have to press a few of those pesky prairie points down, they insist on popping up. But first I will give it a good wash in the machine and a tumble in the dryer to freshen it up. It's nice to have it finished and waiting for a baby to arrive.

My husband took Menucha out to bowl at a place on the other side of town. I hope they're having a good time. In the meantime, I was busy making some cookies. On Tuesdays, I take care of my mother-in-law, and I always bake something to bring her. Today I made whole wheat oatmeal cookies. This is such an easy recipe, and the results are nice and homey. The recipe calls for raisins or chocolate chips, but sometimes I use a combination of both. Yum.


Here's the recipe:

Whole Wheat Oatmeal Cookies

1 cup whole-wheat flour
1 1/4 cups quick-cooking oats
1/2 tsp. baking soda
1/2 tsp salt (I leave this out, as Mom is on a low-sodium diet)
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 cup honey
1 Tbsp molasses
1/2 cup oil
1/2 cup raisins or chocolate chips

1. Preheat oven to 350 degrees
2. Mix dry ingredients, including raisins, in a large bowl
3. Add wet ingredients, mix well.
4. Drop by tablespoonful on a cookie sheet lined with parchment paper, leaving 2 inches of space on all sides.
5. Bake 12 minutes.
6. Allow to cool on baking sheet a couple of minutes, then transfer to wire rack to cool.

I find that I need to bake these for exactly 12 minutes; any shorter and they're raw, any longer and they burn.
But your oven may be different from mine. Also, I almost always double the recipe. If I make it as is, it only makes 24 cookies, and that's never enough. Especially if I use chocolate chips.
